One Pot Broccoli Soup

- 4 Tbsp Butter
- 1 Medium Onion, Choped
- 1/2 Tsp Salt
- 1/2 Tsp Ground Black Pepper
- 3 Garlic Cloves, Chopped
- 1/4 Cup Flour
- 2 Cups Whole Milk
- 3 Cups Chicken Broth
- 3 Cups Broccoli Florets, Chopped
- 1 Carrot
- 8 Oz Cheddar Cheese, Shredded
Melt the butter in a large pot over medium heat.
Add onion, salt, and pepper. Cook for 5 minutes until softened.
Stir in garlic and cook 1 minute. Add flour and whisk for 1–2 minutes.
Pour in chicken broth, whisking continuously.
Add milk, broccoli, carrot, and mustard. Simmer 15–20 minutes until broccoli is tender.
Gradually stir in cheese until melted and creamy.
Season to taste and serve.
