One Pot Broccoli Soup

Ingredients
  

  • 4 Tbsp Butter
  • 1 Medium Onion, Choped
  • 1/2 Tsp Salt
  • 1/2 Tsp Ground Black Pepper
  • 3 Garlic Cloves, Chopped
  • 1/4 Cup Flour
  • 2 Cups Whole Milk
  • 3 Cups Chicken Broth
  • 3 Cups Broccoli Florets, Chopped
  • 1 Carrot
  • 8 Oz Cheddar Cheese, Shredded

Instructions
 

  • Melt the butter in a large pot over medium heat.
  • Add onion, salt, and pepper. Cook for 5 minutes until softened.
  • Stir in garlic and cook 1 minute. Add flour and whisk for 1–2 minutes.
  • Pour in chicken broth, whisking continuously.
  • Add milk, broccoli, carrot, and mustard. Simmer 15–20 minutes until broccoli is tender.
  • Gradually stir in cheese until melted and creamy.
  • Season to taste and serve.
